Cherry notes in perfumery

Have you ever wondered how to make a cherry accord in perfumery?

Here are 6 raw materials which you can use to add a cherry note to your perfumes.

Anisaldehyde

Scent profile: Cherry, Marzipan, Hay, Sweet, Fruity

Anisaldehyde is one of my favourite cherry notes. It's a mid note and is very powerful. It has a clear cherry smell to my nose but also has other nuances such as hay which give it depth. It's restricted by the IFRA so be sure to check the latest IFRA safe use level before using it.

Benzaldehyde

Scent profile: Cherry, Almond, Marzipan

Probably the most well known and widely used cherry note of them all. This one is also used as a flavouring so you may be familiar with it from cherry cola, cherry sweets or cherry tarts. It's a fleeting top note but very powerful, meaning it helps give a burst of cherry when you spray your perfume but if you want your cherry note to last then you'll need to combine it with other things. Effective even at trace amounts. It's restricted by the IFRA so be sure to check the latest IFRA safe use level before using it.

Veratraldehyde

Scent profile: Vanilla, Cherry, Sweet, Gourmand, Powdery

A vanilla note with a cherry facet. A useful twist on the well known vanillin which is fruitier and more cherry like to my nose. It's a long lasting base note making it useful extending your cherry note.

Heliotropin diethyl acetal

Heliotropin diethyl acetal

Scent profile: Cherry, Raspberry, Sweet, Fruity, Powdery

A relative of the popular (but very difficult to obtain) heliotropin. Mid to base note which has a lovely cherry facet and can help create a long lasting cherry note. Can also be used in heliotrope accords.

Anisyl acetone

Scent profile: Fruity, Berry, Lipstick

A more generic berry note which can work nicely in a cherry accord. Also useful for raspberry and blends well with balsamic notes. This one is a mid note.

Anisyl acetate

Anisyl acetate

Scent profile: Fruity, Berry, Lipstick

The Acetate relative of anisyl acetone, this one is stronger, sweeter and more floral to my note. It's still a mid note. Reminds me of many consumer products like soaps, probably due to it being used in them.
